Joining a deathmatch, race, etc will take you to a random stage of whatever you picked. Considering more people are playing their own creations than rockstars, you're likely going to play a custom created match. If you want to join a specific custom map, you'll need to goto Rockstar's social club and find it, and bookmark it.
